Pâpidoux Fine Calvados: Calvados (apple brandy) is the classic drink of Normandy. Over 200 different varieties of apples, many completely unique to the region, are permitted in its production. Some producers use as many as 100 different varieties in pursuit of the flavour profile they prefer. It is not overstating things to say that though apple brandy is made elsewhere in the world, no others taste quite like Normandy's. Versinthe Absinthe: Like traditional Absinthe, this is not a Pastis, as it contains no licorice in the blend. Unlike traditional Absinthe, this contains the distillates from the leaves of wormwood, not the roots. Versinthe is already sweetened for you, so the ritual with the sugar, the water and the slotted spoon is unnecessary. While purists may prefer to drink it straight, for its refreshing bitter taste, most will prefer to let the 'green fairy' out (the drink turns a milky glowing green colour) by adding 6-10 parts iced water per measure of Versinthe.
